Along the same lines as first lady Michelle Obama’s efforts to plant a White House vegetable garden to promote healthy eating and eco-friendly living, Alfred University (N.Y.) offered a course this semester titled “Eating Locally, Thinking Globally.”
The honors course, “designed to explore the local-food movement developing throughout the country,” will culminate in students preparing a meal with the homegrown products.
